PREPARATION
Preheat your oven to 400°F. Dice the sweet potato into small cubes and place them on a baking sheet lined with parchment paper. Drizzle with a small amount of olive oil, season with salt and pepper, and roast for about 20-25 minutes until tender and lightly browned.
While the sweet potatoes roast, dice the red bell pepper and roughly chop the spinach. Slice the turkey sausage into rounds.
