INGREDIENTS
3 slices Spam (84g total)
2 large Eggs
1 cup Cauliflower Rice
1 quarter-cup Green Peas
1 small Carrot
1 small Onion
1 clove Garlic
1 tablespoon Soy Sauce
1 teaspoon Sesame Oil
2 tablespoons Green Onions
PREPARATION
Dice the Spam into small cubes and set aside.
Chop the carrot, onion, and green onions finely. Mince the garlic.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the diced Spam and stir-fry until it becomes crispy and lightly browned, about 3-4 minutes.
Push the Spam to one side of the skillet, then crack the eggs directly into the pan. Scramble them until just set, then mix with the Spam.
Add the chopped onions, garlic, and carrots and stir-fry for another 2 minutes until they begin to soften.
Add the cauliflower rice and green peas, stirring well to combine all ingredients. Continue to cook for 3-4 minutes until the vegetables are tender.
Pour in the soy sauce and toss everything together to evenly distribute the flavor.
Remove from heat, garnish with chopped green onions, and serve immediately.
