PREPARATION
Preheat your oven to 425°F.
Rice the cauliflower by processing 200g of cauliflower florets in a food processor until fine. Steam for 5 minutes until softened.
Transfer the steamed cauliflower to a clean towel or cheesecloth and squeeze out as much water as possible.
In a bowl, mix the drained cauliflower with one beaten egg, salt, and pepper until a sticky dough forms.
Press the cauliflower mixture on a parchment-lined baking sheet into a thin, even round crust.
Bake the crust for 15-18 minutes until the edges start to turn golden.
Meanwhile, season the 50g chicken breast with a pinch of salt and pepper and grill or pan-sear until fully cooked; then shred or slice into small pieces.
Remove the crust from the oven and spread 0.25 cup of tomato sauce evenly over it.
Sprinkle 0.75 cup of part-skim mozzarella cheese on the sauce, then evenly distribute the cooked chicken over the top.
Return the pizza to the oven and bake for an additional 7-10 minutes until the cheese is melted and bubbly.
Once out of the oven, sprinkle the freshly chopped basil and parsley over the pizza.
