1 medium Zucchini (approx. 196g)
1.5 tbsp Extra Virgin Olive Oil
3 garlic cloves
1 tbsp Lemon Juice
1 tbsp Mixed Fresh Herbs
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Using a spiralizer or a vegetable peeler, create zucchini noodles and place them in a baking dish.
Drizzle 0.75 tbsp of olive oil over the zucchini noodles, sprinkle with half of the mixed herbs, salt, and pepper. Toss gently to coat evenly.
Roast the zucchini noodles in the preheated oven for about 10 minutes, until slightly tender and beginning to golden.
Meanwhile, heat the remaining 0.75 tbsp olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet, seasoning with salt, pepper, and the remaining herbs. Cook for 2-3 minutes per side until the shrimp turn pink and are cooked through.
Once the zucchini noodles are roasted, transfer them to a serving bowl. Top with the garlic shrimp and drizzle with lemon juice.
Toss gently to combine the flavors and serve immediately.
