6 oz Medium Shrimp, peeled & deveined
150 g Mixed Mushrooms
3 cloves Garlic, minced
1 tbsp Unsalted Butter
1 tsp Olive Oil
2 tbsp Fresh Parsley, chopped
Salt & Black Pepper to taste
PREPARATION
Pat the shrimp dry with a paper towel and season lightly with salt and pepper.
Clean and slice the mixed mushrooms. Mince the garlic and chop the fresh parsley.
Heat the olive oil in a large skillet over medium heat. Add the mushrooms and sauté for about 3-4 minutes until they soften and start to brown.
Push the mushrooms to the side of the skillet and add the shrimp. Sear the shrimp for 2-3 minutes on each side until they turn pink and opaque.
