1 medium Sweet Potato (~150g)
1.5 cups Nonfat Greek Yogurt (~367g)
1 teaspoon Extra Virgin Olive Oil
2 tablespoons Fresh Chives
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Wash and scrub the sweet potato thoroughly to ensure a clean, crisp skin.
Dry the sweet potato completely. Lightly prick the skin with a fork to allow steam to escape.
Rub the sweet potato with the extra virgin olive oil and season lightly with salt and pepper.
Place the sweet potato on a baking sheet and roast in the oven for 40-50 minutes, or until the skin is crispy and the inside is tender.
While the sweet potato is roasting, finely chop the fresh chives and measure out the nonfat Greek yogurt.
Once the sweet potato is done, remove it from the oven and let it cool for a few minutes.
Slice open the sweet potato and fluff the insides with a fork. Dollop the Greek yogurt on top and sprinkle with chopped chives.
