INGREDIENTS
6 ounces Shrimp
1.5 cups Cauliflower Rice
1 tablespoon Olive Oil
0.5 tablespoon Extra Olive Oil
2 cloves Garlic
1 Lemon
4 tablespoons Fresh Parsley
Salt & Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the shrimp into the skillet and sear for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp and set aside.
In the same skillet, add the extra olive oil and minced garlic. Sauté for about 30 seconds until fragrant.
Add the cauliflower rice to the skillet and sauté for 3-4 minutes until it is slightly tender but still has a bit of crunch.
Zest and juice the lemon over the cauliflower rice, stirring in to combine with the garlic flavor.
Return the shrimp to the skillet and toss everything together, letting the flavors meld for an additional minute.
Remove from heat, sprinkle with fresh parsley, taste and adjust seasoning with salt and pepper if needed before serving.
