Preheat your oven to 425°F.
In a bowl, combine the cauliflower rice, egg, shredded mozzarella, and a pinch of salt and pepper. Mix well until the mixture is evenly combined.
Press the cauliflower mixture onto a parchment-lined baking sheet to form a thin, circular crust.
Bake the crust in the preheated oven for 12-15 minutes until it starts to firm and get slightly golden.
While the crust is baking, season the chicken breast with salt and pepper and cook it in a non-stick skillet over medium heat until fully cooked and slightly charred, then chop into bite-sized pieces.
Toss the cooked chicken pieces in buffalo sauce until well coated.
Spread the buffalo chicken evenly over the pre-baked cauliflower crust. For an extra burst of flavor, drizzle a little more buffalo sauce on top if desired.
Return the assembled pizza to the oven for an additional 5-7 minutes to allow the flavors to meld and for the cheese to melt further.
Once done, remove from oven, slice, and serve warm.
