INGREDIENTS
5 oz Sirloin Steak
100 g Baby Potatoes
1/2 tbsp Unsalted Butter
2 Garlic Cloves
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
Salt (pinch)
Black Pepper (pinch)
PREPARATION
Preheat your oven to 400°F.
Wash the baby potatoes and cut any larger ones in half so they are uniformly sized. Toss them in a bit of olive oil (optional if within calorie limits), salt, pepper, rosemary, and thyme.
Spread the potatoes on a baking sheet in a single layer and roast for 20-25 minutes until tender and lightly crispy.
While the potatoes are roasting, pat the steak dry with paper towels. Season both sides with salt and pepper.
Heat a skillet over medium-high heat. Once hot, sear the steak for about 3-4 minutes on each side for medium-rare (adjust time for desired doneness).
In the last minute of cooking, add the butter and crushed garlic cloves to the skillet. Spoon the melted herb-garlic butter over the steak.
Once the steak is cooked to your liking, remove it from the skillet and let it rest for a few minutes.
Plate the steak with the roasted baby potatoes on the side, spooning any remaining garlic butter from the pan over the steak.
