Crispy Baked Onion Rings with Almond Flour Coating
Enjoy a healthier twist on classic onion rings by coating tender onion slices in a crunchy almond flour mixture and baking them to crispy perfection. Served with a protein-packed Greek yogurt dill dipping sauce, this dish delivers a satisfying crunch along with a burst of savory flavor.
INGREDIENTS
1 large Onion (150g)
2 eggs
1/3 cup Almond Flour (37g)
1/2 cup Plain Nonfat Greek Yogurt
Olive Oil Spray (4 sprays)
1/2 tsp Dried Dill
1/2 tsp Paprika
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Peel the onion and slice it into 1/4 to 1/2 inch thick rings. Separate the rings gently.
In a shallow dish, whisk together the two eggs with a pinch of salt and pepper.
In another bowl, combine the almond flour, dried dill, paprika, and a small pinch of salt and pepper.
Dip each onion ring first into the egg wash and then dredge evenly in the almond flour mixture, shaking off any excess.
Place the coated onion rings on the prepared baking sheet. Lightly spray olive oil over the rings to help them crisp.
Bake in the preheated oven for 15-20 minutes or until the rings are golden and crispy, flipping them halfway through baking.
While baking, prepare the dipping sauce by stirring the Greek yogurt with a pinch more dill, salt, and pepper.
Once baked, remove the onion rings from the oven and serve warm with the Greek yogurt dill sauce on the side.
