INGREDIENTS
6 oz Ground Turkey (93% lean)
1 medium Bell Pepper
1/4 cup chopped Onion
1 clove Garlic, minced
1/4 cup Tomato Sauce
1 tsp Extra Virgin Olive Oil
1/4 cup Cooked Quinoa
1 tsp Mixed Dried Herbs
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Wash the bell pepper, slice off the top, and remove the seeds and membranes. Set aside.
In a skillet over medium heat, add the olive oil. Sauté the chopped onion and minced garlic until softened and fragrant, about 2-3 minutes.
Add the ground turkey to the skillet. Cook until it is browned and fully cooked, breaking it up as it cooks.
Stir in the tomato sauce, cooked quinoa, and mixed dried herbs. Season with salt and pepper to taste, and let the mixture simmer for another 2 minutes.
Stuff the bell pepper with the turkey mixture, packing it well.
Place the stuffed bell pepper in a baking dish and bake in the preheated oven for 25-30 minutes, or until the pepper is tender and flavors meld.
Remove from the oven and allow to cool slightly before serving.
