1/2 cup Shelled Edamame (80g)
1 medium Red Bell Pepper (120g)
1 cup Broccoli (90g)
1 medium Carrot (61g)
2 pieces Green Onion (15g)
1 tsp Sesame Oil (5g)
1 tbsp Fresh Ginger (6g)
2 cloves Garlic (6g)
1 tbsp Low-Sodium Soy Sauce (16g)
1 tbsp Rice Vinegar (15g)
1 tsp Sesame Seeds (3g)
1 tsp Olive Oil (5g)
PREPARATION
Press the tofu to remove excess water. Once pressed, cut the tofu into 1-inch cubes.
In a bowl, gently toss the tofu cubes with sesame oil, half of the grated ginger, and a pinch of salt if desired.
Preheat a non-stick pan over medium-high heat. Add the tofu cubes and sauté until they are golden and crispy on all sides, about 6-8 minutes. Remove tofu from the pan and set aside.
In the same pan, add olive oil and then sauté the minced garlic along with the remaining ginger for about 30 seconds until fragrant.
Add the sliced red bell pepper, broccoli florets, and carrot slices. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crisp.
Stir in the shelled edamame and drizzle the low-sodium soy sauce and rice vinegar over the vegetables. Continue to stir-fry for another 1-2 minutes to heat through.
Return the crispy tofu to the pan and gently toss to combine all the ingredients so that the flavors meld together.
