INGREDIENTS
4 oz Lean Sirloin Steak
150 g Baby Potatoes
1 tbsp Unsalted Butter
1 tsp Olive Oil
1 Garlic Clove
2 sprigs Fresh Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Toss the baby potatoes with olive oil, salt, and pepper, then spread them out on a baking sheet.
Roast the potatoes in the oven for about 20-25 minutes until they are crispy on the outside and tender on the inside, tossing halfway through.
While the potatoes are roasting, pat the steak dry and season it with salt and pepper.
Heat a skillet over medium-high heat. Sear the steak for about 3-4 minutes on each side for medium-rare, adjusting time as needed for desired doneness.
In the last minute of cooking, reduce the heat to low and add the butter, crushed garlic clove, and fresh herbs to the skillet. Spoon the melted herb-garlic butter over the steak as it finishes cooking.
Remove the steak from the skillet and let it rest for a few minutes. Slice against the grain and serve alongside the roasted baby potatoes.
