INGREDIENTS
4 oz Lean Sirloin Steak
1 cup chopped Red Bell Pepper
1/2 cup chopped Yellow Onion
1 cup Cauliflower Rice
3 large Egg Whites
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Thinly slice the lean sirloin steak against the grain, and season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the steak slices and cook until browned on all sides, about 3-4 minutes. Remove the steak and set aside.
In the same skillet, add the chopped yellow onion and red bell pepper. Sauté until they become tender and slightly charred, about 4-5 minutes.
Meanwhile, lightly warm the cauliflower rice in a separate pan or microwave until just softened.
Return the cooked steak to the skillet with the vegetables. Pour in the egg whites and stir gently, allowing the egg whites to set and coat the steak and veggies, about 2-3 minutes.
Plate the cauliflower rice as the base, then top with the sirloin, bell pepper, and egg white scramble mix.
Finish with an extra pinch of salt and pepper if desired, and serve warm.
