PREPARATION
Prepare all ingredients: rinse the bok choy and pat dry, cube the tofu, shell the edamame if needed, and lightly beat the egg in a small bowl.
Mince the garlic and grate the ginger.
Heat a non-stick skillet over medium-high heat. Add the tofu cubes and sear until golden on all sides, about 4-5 minutes. Transfer tofu to a plate.
In the same skillet, add the bok choy (cut larger pieces if desired) and stir-fry for about 2-3 minutes until slightly tender but still crisp.
