Enjoy a twist on the classic onion rings with a crunchy almond flour coating, perfectly baked to achieve a crispy texture without the extra oil. Paired with a refreshing Greek yogurt herb dip, this recipe is a light yet satisfying option that balances hearty crunch with a tangy, protein-boosting dip.
INGREDIENTS
1 large onion (110g)
1/3 cup almond flour (37g)
3 whole eggs
1/2 cup nonfat Greek yogurt (120g)
1 tbsp lemon juice
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 tbsp fresh parsley (chopped)
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Peel the large onion and slice it into approximately 1/4-inch thick rings. Separate the rings carefully.
In a shallow bowl, whisk the 3 eggs until well combined. In a separate bowl, place the almond flour along with the garlic powder, paprika, salt, and pepper.
Dip each onion ring first into the egg wash, then coat evenly in the almond flour mixture. For extra crunch, you can double dip by repeating the process.
Arrange the coated onion rings on the prepared baking sheet in a single layer.
Bake in the preheated oven for 18-22 minutes, flipping halfway through, until the rings are crisp and golden brown.
While the onion rings are baking, prepare the herb dip by combining the nonfat Greek yogurt, lemon juice, salt, pepper, and chopped fresh parsley in a small bowl. Mix well.
Once baked, remove the onion rings from the oven and let them cool slightly before serving with the Greek yogurt herb dip on the side.
