Creamy Cauliflower Alfredo Chicken with Zucchini Noodles
Savor this comforting yet healthy twist on classic Alfredo – tender seared chicken breast served over vibrant zucchini noodles and smothered in a silky, cauliflower-based Alfredo sauce accented by a hint of nutritional yeast for a cheesy flavor.
INGREDIENTS
4 oz Chicken Breast
1 tsp Olive Oil
1 cup Cauliflower (chopped)
1 cup Cauliflower (for sauce)
1/4 cup Unsweetened Almond Milk
2 tbsp Nutritional Yeast
1 medium Zucchini (spiralized)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Warm olive oil in a skillet over medium heat. Season the chicken breast with salt and pepper.
Sear the chicken for about 4-5 minutes per side until cooked through and golden. Remove chicken and set aside.
In the same skillet, add minced garlic and the chopped cauliflower. Sauté for 3-4 minutes until slightly tender.
Transfer the sautéed cauliflower and garlic to a blender along with the second cup of cauliflower meant for the sauce, almond milk, and nutritional yeast. Blend until smooth and creamy. If needed, add a splash more almond milk to reach desired consistency. Season with salt and pepper.
Return the sauce to the skillet and gently reheat.
Meanwhile, prepare zucchini noodles by lightly steaming or sautéing in a non-stick pan until just tender, about 2-3 minutes.
Slice the cooked chicken and arrange over the zucchini noodles, then generously top with the warm cauliflower Alfredo sauce.
Serve immediately while hot for a delicious and healthy meal.
