INGREDIENTS
2 cups riced Cauliflower (150g)
2 egg whites + 1 extra egg white (total 3 egg whites, 99g)
1/2 cup shredded Low-Fat Mozzarella Cheese (56g)
2 tablespoons grated Parmesan Cheese (10g)
1 medium Tomato (123g)
1 handful Fresh Basil Leaves (5g)
1 teaspoon Olive Oil (4.5g)
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, combine the riced cauliflower with the egg whites. Mix thoroughly, then add the mozzarella and Parmesan cheeses. Stir until the mixture is well combined.
Transfer the mixture onto the prepared baking sheet, and press it into a thin, even circle to form the pizza crust.
Bake the crust in the preheated oven for about 15-18 minutes, or until the edges are golden and the crust is set.
Remove the crust from the oven. Top with thinly sliced tomato rounds, then drizzle with olive oil.
Garnish with fresh basil leaves and, if desired, a light sprinkle of extra Parmesan.
Return to the oven for an additional 3-5 minutes to warm the toppings.
Remove from the oven and let cool for a couple of minutes before slicing and serving.
