INGREDIENTS
3 oz Grass-Fed Ground Beef
1/4 cup Black Beans (canned, drained)
1 Whole Wheat Tortilla
2 Tbsp Enchilada Sauce
1/8 cup Shredded Cheddar Cheese
1/2 tsp Cumin
1/2 tsp Chili Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a skillet over medium heat, cook the grass-fed ground beef until browned. Drain any excess fat.
Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for another 2 minutes until flavors meld.
Lay out the whole wheat tortilla and spread a thin layer of enchilada sauce over it.
Spoon the beef and bean mixture onto the center of the tortilla, then sprinkle with a bit of shredded cheddar cheese.
Roll the tortilla tightly to form an enchilada. Place it seam-side down in a small baking dish and drizzle the remaining enchilada sauce on top.
Sprinkle the rest of the cheese over the enchilada.
Bake in the preheated oven for 10-12 minutes until the cheese has melted and the enchilada is heated through.
Remove from oven and let cool slightly before serving.
