INGREDIENTS
300g Firm Tofu
0.5 cup Shelled Edamame
1 cup Chopped Broccoli
0.5 cup Sliced Red Bell Pepper
0.5 cup Snap Peas
1 tsp Sesame Oil
1 tbsp Sesame Seeds
1 tbsp Grated Fresh Ginger
1 Garlic Clove
1 tbsp Low Sodium Soy Sauce
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes.
Heat a non-stick skillet over medium-high heat and add half of the sesame oil. Carefully add the tofu cubes and sauté until all sides are golden and crispy. Remove the tofu from the skillet and set aside.
In the same skillet, add the remaining sesame oil along with grated ginger and minced garlic. Sauté for about 30 seconds until fragrant.
Add the chopped broccoli, sliced red bell pepper, and snap peas to the skillet. Stir-fry the vegetables for 3-4 minutes until they begin to soften yet maintain their crispness.
Return the crispy tofu to the skillet and add the shelled edamame. Drizzle with low sodium soy sauce and toss everything together until well combined and heated through.
Finish the dish by sprinkling toasted sesame seeds over the top. Serve immediately while warm.
