Savor the delightful marriage of tender chicken breast infused with a creamy, tangy Greek yogurt sauce and a smooth, naturally sweet potato mash, accented with garlic and fresh herbs. This dish is a wholesome, satisfying meal that perfectly balances robust flavors and nourishing ingredients.
INGREDIENTS
4 oz Chicken Breast
1/3 cup Non-Fat Greek Yogurt
1 medium Sweet Potato
1 clove Garlic
1 tsp Olive Oil
1 tbsp Fresh Herbs (parsley/dill)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the chicken breast with salt and pepper on both sides.
In a small bowl, mix the non-fat Greek yogurt with a minced garlic clove and chopped fresh herbs.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breast for about 2-3 minutes on each side until lightly browned.
Spoon the Greek yogurt mixture over the chicken breast and transfer the skillet to the oven. Bake for 12-15 minutes, or until the chicken is cooked through.
Meanwhile, peel and cube the sweet potato. Boil in a pot of water until tender, about 10 minutes. Drain and mash with a pinch of salt, and a little pepper to taste.
Plate the chicken with a side of sweet potato mash and drizzle any remaining yogurt sauce over the top.
Garnish with additional fresh herbs if desired and serve warm.
