INGREDIENTS
6 oz Salmon Fillet
1 medium Zucchini
1 cup Broccoli
1 cup Cherry Tomatoes
1 tbsp Olive Oil
2 tbsp Fresh Parsley
2 tbsp Fresh Dill
1 tsp Garlic Powder
1 tbsp Lemon Juice
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking tray with parchment paper and arrange the salmon fillet on one side.
In a small bowl, mix the fresh parsley, dill, garlic powder, and lemon juice. Drizzle half of the olive oil and then evenly spread the herb mixture over the salmon, pressing gently to help it adhere.
Chop the zucchini into rounds, and cut broccoli into small florets. Place these along with the cherry tomatoes on the baking tray.
Drizzle the remaining olive oil over the vegetables and toss them gently to coat. Season with salt and pepper as desired.
Place the tray in the oven and roast for 15-18 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Remove from the oven, plate, and serve immediately.
