A lighter twist on traditional fried rice featuring tender chicken breast, nutrient-packed cauliflower rice, fresh mixed veggies, and a subtly savory blend of coconut aminos and sesame oil. Perfect for a balanced meal that satisfies your cravings without overloading on calories.
INGREDIENTS
4 oz Chicken Breast
2 cups Cauliflower Rice
1 large Egg
1/2 cup Mixed Veggies (Peas & Carrots)
1 tbsp Coconut Aminos
1 tsp Sesame Oil
2 tbsp Green Onion
PREPARATION
Cut the chicken breast into small bite-sized pieces and season with a pinch of salt and pepper.
Heat the sesame oil in a non-stick skillet over medium-high heat.
Sauté the chicken pieces until lightly browned and thoroughly cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the cauliflower rice and mixed veggies, stirring occasionally for about 3-4 minutes until slightly tender.
Push the veggies to the side, crack the egg into the space and scramble until just set.
Return the cooked chicken to the pan. Drizzle the coconut aminos over the mixture and stir everything together for an additional 2 minutes to meld the flavors.
Garnish with chopped green onions and serve warm.
