INGREDIENTS
300g Extra Firm Tofu
100g Shelled Edamame
100g Broccoli
100g Red Bell Pepper
50g Carrot
1 tsp Cornstarch
1 tsp Sesame Oil
1 tbsp Fresh Ginger (grated)
1 clove Garlic (minced)
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
1 Green Onion (sliced)
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
Lightly dust the tofu cubes with cornstarch for an extra crispy texture.
Heat sesame oil in a non-stick skillet or wok over medium-high heat. Add the tofu and sauté until all sides are golden and crispy. Remove tofu and set aside.
In the same skillet, add grated ginger and minced garlic. Sauté briefly until fragrant.
Add broccoli florets, sliced red bell pepper, and carrot slices. Stir-fry for 3-4 minutes until they start to become tender but remain crisp.
Return the crispy tofu to the skillet along with the shelled edamame. Drizzle in soy sauce and rice vinegar, tossing gently to coat all ingredients.
Cook for an additional 2 minutes to combine flavors.
Finish by sprinkling sesame seeds and sliced green onion on top before serving.
