150g Cauliflower (riced)
1/2 cup Kimchi (about 85g)
150g Firm Tofu
1 Egg
100g Shelled Edamame
1 tbsp Sesame Oil
1 clove Garlic
1 tsp Fresh Ginger
Pinch of Black Pepper
PREPARATION
Rice the cauliflower by grating or blitzing in a food processor until it resembles rice-sized grains.
Heat sesame oil in a non-stick pan over medium-high heat, then add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add the firm tofu (cubed) to the pan and fry until lightly golden on all sides.
Stir in the riced cauliflower and shelled edamame. Sauté for 3-4 minutes until the cauliflower softens slightly.
Mix in kimchi and season with black pepper. Continue to stir-fry for another 2 minutes so the flavors meld together.
Push the stir-fry to one side of the pan and crack the egg into the cleared space. Scramble the egg until just set, then mix it thoroughly with the rest of the ingredients.
