INGREDIENTS
350g Firm Tofu
1 cup Broccoli
1 medium Red Bell Pepper
1/2 cup Snap Peas
1 small Carrot
1 tbsp Sesame Seeds
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 clove Garlic
1 tsp Fresh Ginger
1 tsp Cornstarch
1 tsp Sesame Oil
PREPARATION
Press the tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Lightly dust the tofu cubes with cornstarch to help them crisp up during cooking.
Heat a non-stick pan over medium-high heat and add a drizzle of sesame oil. Sauté the tofu cubes until all sides are golden and crispy, then remove and set aside.
In the same pan, add a little more sesame oil if necessary, then sauté minced garlic and grated ginger for about 30 seconds until fragrant.
Add broccoli florets, sliced red bell pepper, snap peas, and julienned carrot to the pan. Stir-fry the vegetables for 3-4 minutes until they are crisp-tender.
Return the crispy tofu to the pan with the vegetables. Drizzle with soy sauce and rice vinegar, tossing gently to combine and heat through.
Sprinkle sesame seeds over the mixture and toss briefly to evenly distribute.
Serve warm, garnished with additional sesame seeds or sliced scallions if desired.
