PREPARATION
Preheat your oven to 425°F.
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a large bowl, gently toss the tofu cubes with olive oil, fajita spice mix, lime juice, and a pinch of salt until evenly coated.
Spread the tofu on a lined sheet pan. Add chopped bell peppers and sliced red onion, distributing them evenly around the tofu.
Roast in the oven for 25-30 minutes, stirring halfway through, until the tofu is crispy and the vegetables are tender and slightly charred.
During the last 5 minutes of roasting, sprinkle the black beans over the vegetables to warm them through.
