Creamy Cauliflower-Potato Mash with Roasted Garlic
A comforting, creamy mash blending tender cauliflower and fluffy potato with the aromatic depth of roasted garlic and a tangy touch of Greek yogurt. Finished with a drizzle of olive oil, this dish is both satisfying and light—perfect for a wholesome breakfast, lunch, or dinner.
INGREDIENTS
250g Cauliflower
1 medium Potato (150g)
1 cup Plain Nonfat Greek Yogurt (245g)
3 cloves Roasted Garlic
1 tablespoon Extra Virgin Olive Oil
Salt and Pepper, to taste
PREPARATION
Preheat your oven to 400°F. Place unpeeled garlic cloves on a piece of aluminum foil, drizzle lightly with olive oil, wrap in the foil, and roast for about 25-30 minutes until soft and caramelized.
While the garlic roasts, prepare the vegetables. Cut the cauliflower into florets and peel and cube the potato.
Steam the cauliflower and potato cubes until tender, about 12-15 minutes.
Once roasted, squeeze the garlic cloves out of their skins.
Transfer the steamed cauliflower, potato, and roasted garlic into a bowl. Add the Greek yogurt and olive oil.
Mash the mixture using a potato masher or blend lightly for a creamier texture. Season with salt and pepper to taste.
Serve warm as a satisfying, creamy dish ideal for breakfast, lunch, or dinner.
