PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, cornstarch, grated ginger, and minced garlic.
Lightly coat the tofu cubes in the sauce mixture and let them marinate for 10 minutes.
