200g Brussels Sprouts
1/2 cup Chickpeas (125g)
1 tbsp Olive Oil (13.5g)
2 cloves Garlic
1 tbsp Balsamic Vinegar
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Season the chicken breast with salt and pepper. In a hot skillet with half the olive oil, sear the chicken for 2-3 minutes per side until lightly browned.
Transfer the chicken to a baking sheet and roast in the oven for about 10-12 minutes until cooked through. Once done, slice into strips.
While the chicken roasts, trim and cut the Brussels sprouts in halves. Toss them with the remaining olive oil, salt, and pepper.
Heat a large skillet over medium-high heat and add the Brussels sprouts. Let them sear cut-side down for 5 minutes until crispy and caramelized.
