Crispy Fried Egg Rice Bowl with Fresh Herbs
A vibrant rice bowl featuring a perfectly fried egg with crispy edges, set atop a bed of lightly crisped brown rice and tender edamame. Fresh cilantro and basil add a burst of herbaceous brightness, while a hint of garlic and a drizzle of olive oil tie the flavors together for a satisfying and energizing meal.
INGREDIENTS
3 Large Eggs
1/2 cup Cooked Brown Rice (~100g)
3/4 cup Shelled Edamame (~120g)
1 teaspoon Olive Oil
2 tbsp Fresh Cilantro
2 tbsp Fresh Basil
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Heat a nonstick skillet over medium-high heat and add the olive oil.
Add the cooked brown rice to the pan and press it down gently. Allow it to cook undisturbed for 2-3 minutes to develop a light crisp on the bottom.
Stir in the shelled edamame and finely minced garlic, cooking for another 2 minutes until fragrant.
Push the rice and edamame mixture to one side of the pan. Crack the eggs into the empty space and fry them, allowing the edges to become crispy while the yolks remain slightly runny. Season with salt and pepper.
Once the eggs reach your desired doneness, carefully mix them into the crispy rice and edamame.
Transfer the mixture to a bowl and garnish generously with freshly chopped cilantro and basil.
Serve immediately and enjoy your nutrient-packed, flavorful bowl.
