INGREDIENTS
5 oz Salmon Fillet
1 tbsp Whole Wheat Breadcrumbs
1 tsp Unsalted Butter
1 tsp Olive Oil
1 tbsp Fresh Mixed Herbs (Rosemary, Thyme, Parsley)
1 tbsp Lemon Juice
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel. Brush lightly with olive oil and season with salt and black pepper.
In a small bowl, combine the whole wheat breadcrumbs with the fresh mixed herbs. Press this herb breadcrumb mixture onto the top of the salmon fillet to form a crust.
Place the salmon on the prepared baking sheet and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
While the salmon bakes, prepare the lemon butter sauce by gently melting the butter in a small saucepan over low heat. Stir in the lemon juice and a pinch of salt.
Once the salmon is cooked, remove from the oven. Drizzle the warm lemon butter sauce over the top of the salmon fillet and serve immediately.
