Citrus-Garlic Shrimp with Zucchini Noodles
Enjoy a light yet satisfying dish featuring succulent shrimp bathed in a zesty citrus and garlic sauce, tossed with fresh zucchini noodles. This dish offers a refreshing balance of bright flavors, tender shrimp, and perfectly spiralized vegetables for a healthful and vibrant meal.
INGREDIENTS
6 oz Shrimp (medium, peeled and deveined)
2 medium Zucchini
1 tbsp Olive Oil
2 cloves Garlic
1 Lemon
1/2 tsp Red Pepper Flakes
Salt & Black Pepper to taste
PREPARATION
If using whole shrimp, peel and devein them. Rinse and pat dry.
Using a spiralizer, turn the zucchinis into noodles. If you don't have a spiralizer, use a vegetable peeler to create thin strips.
In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
Squeeze the juice of one lemon over the shrimp and stir to combine.
Add the zucchini noodles to the skillet and gently toss them with the shrimp and sauce. Cook for an additional 1-2 minutes until the noodles are just heated through but still retain their crunch.
Season with salt and freshly ground black pepper to taste. Serve immediately, garnished with extra lemon wedges if desired.
