INGREDIENTS
1/2 cup Rolled Oats (45g)
2 Large Eggs (100g)
1 medium Ripe Banana (118g)
1/3 cup Nonfat Greek Yogurt (80g)
1/2 scoop Vanilla Whey Protein Powder (15g)
1 teaspoon Coconut Oil (4.5g)
1 teaspoon Ground Cinnamon (2.6g)
1 teaspoon Vanilla Extract (4.2g)
PREPARATION
In a blender, combine rolled oats, eggs, nonfat Greek yogurt, vanilla whey protein powder, cinnamon, and vanilla extract. Blend until smooth to form a thick batter.
Peel the banana and slice it into 1/4-inch thick rounds.
Heat a non-stick skillet over medium heat and add the coconut oil, swirling to coat evenly.
Pour about 1/4 cup of batter for each pancake into the skillet. Cook for 2-3 minutes until small bubbles form on the surface.
Gently place a few banana slices on top of the pancake in the skillet to help caramelize as it cooks further.
Flip the pancake and cook for another 2 minutes until both sides are golden and the banana has caramelized slightly.
Repeat with the remaining batter and banana slices.
Serve warm, optionally adding extra banana slices on top for added sweetness and texture.
