1 cup Low-Fat Cottage Cheese (210g)
2 cups Whole Wheat Flour (240g)
2 tbsp Olive Oil (27g)
1 medium Mashed Banana (118g)
2 tsp Cinnamon (5g)
1/4 cup Honey (85g)
1 tsp Baking Soda (4g)
1/2 tsp Salt (3g)
PREPARATION
Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
In a large mixing bowl, whisk together the Nonfat Greek Yogurt, egg whites, and whole eggs until smooth.
Stir in the Whey Protein Isolate and Low-Fat Cottage Cheese until well combined.
Fold in the Whole Wheat Flour gradually, mixing until just incorporated. Add the Baking Soda and Salt and mix lightly.
In a separate small bowl, blend the mashed banana, Olive Oil, Honey, and 1 teaspoon of Cinnamon to form the swirl mixture.
