INGREDIENTS
5 oz Chicken Breast (140g)
1 tbsp Low-Sodium Soy Sauce (15g)
1 tsp Fresh Ginger, grated (2g)
1 clove Garlic, minced (3g)
0.5 tsp Honey (3g)
1 tbsp Lime Juice (15g)
1 cup Steamed Broccoli (90g)
0.5 cup Red Bell Pepper, sliced (46g)
0.5 cup Cooked Brown Rice (100g)
PREPARATION
In a small bowl, combine the low-sodium soy sauce, grated ginger, minced garlic, honey, and lime juice to create the teriyaki marinade.
Place the chicken breast in a shallow dish or ziplock bag and pour half of the marinade over it. Let it marinate for at least 20 minutes, turning occasionally.
Preheat a non-stick skillet over medium-high heat. Add the marinated chicken and sear for 3-4 minutes on each side until the chicken is browned and cooked through.
In the remaining marinade, add the cooked brown rice and allow it to warm through in a small pan over low heat, just enough to absorb the flavorful sauce.
Prepare your bowl by arranging the warmed brown rice, steamed broccoli, and red bell pepper slices.
Slice the teriyaki chicken and place it on top of the vegetables and rice.
Drizzle any extra sauce over the bowl for an extra burst of flavor. Serve immediately and enjoy your sticky ginger-garlic teriyaki chicken bowl.
