INGREDIENTS
4 oz Flank Steak
1 Whole Wheat Tortilla
1/4 cup Reduced-Fat Cheddar Cheese, shredded
2 Tbsp Lime Juice
1 tsp Olive Oil
1 medium diced Tomato
2 Tbsp finely chopped Red Onion
2 Tbsp chopped Fresh Cilantro
1 Tbsp minced Jalapeño
Salt & Pepper to taste
PREPARATION
In a bowl, combine lime juice, olive oil, salt, and pepper. Add the flank steak, ensuring it's well coated. Marinate for at least 20 minutes.
Preheat a grill pan or skillet over medium-high heat. Grill the steak for about 4 minutes per side for medium-rare, or adjust time to your preferred doneness. Let it rest for 5 minutes before slicing thinly.
While the steak rests, mix the diced tomato, red onion, cilantro, and jalapeño in a small bowl to create a fresh salsa.
Heat a non-stick skillet over medium heat. Place the whole wheat tortilla and sprinkle half of the shredded cheese on one half of the tortilla. Arrange the sliced steak over the cheese, then sprinkle the remaining cheese on top.
Fold the tortilla and cook for 2-3 minutes on each side until the tortilla is lightly toasted and the cheese is melted.
Slice the quesadilla into wedges and top with a generous spoonful of fresh salsa. Serve immediately.
