INGREDIENTS
5 oz Salmon Fillet
8 spears Asparagus
1/2 tbsp Olive Oil
1 Garlic Clove
1 tbsp Lemon Juice
1 tbsp Mixed Fresh Herbs (Parsley & Dill)
Salt and Pepper to taste
PREPARATION
Pat the salmon dry with paper towels. In a small bowl, combine the chopped fresh herbs, minced garlic, a pinch of salt, and pepper.
Lightly brush the salmon fillet with olive oil and spread the herb mixture evenly over the top.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon, skin-side down if applicable, and sear for about 3-4 minutes until a crust forms.
Carefully flip the salmon and continue cooking for another 3-4 minutes until the fish is just cooked through.
While the salmon cooks, toss the asparagus spears with a little olive oil, salt, and pepper. In a separate pan or during the last couple of minutes of salmon cooking, sauté or roast the asparagus until tender yet crisp.
Drizzle lemon juice over the salmon and asparagus just before serving. Enjoy your meal!
