Enjoy a delightful plate of pan seared salmon with a crispy herb crust paired with tender asparagus sautéed in a rich garlic butter. This balanced dish offers a satisfying mix of flavors and textures that's perfect for a hearty dinner or a special lunch.
INGREDIENTS
5 ounces Salmon Fillet
1 cup Fresh Asparagus
1 clove Garlic
2 tbsp Fresh Mixed Herbs (Parsley & Dill)
1 tsp Olive Oil
1 tbsp Butter
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel. Season both sides with salt and pepper.
Sprinkle the fresh mixed herbs evenly over the salmon to create a light crust.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, place the salmon skin-side down (if skin is on) and sear for about 4-5 minutes until the crust is golden.
Flip the salmon carefully and cook for an additional 3-4 minutes, or until the internal temperature reaches your desired doneness.
While the salmon cooks, trim the woody ends off the asparagus and set aside.
In a separate small pan, melt butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the asparagus to the garlic butter and toss to coat. Sauté for 3-4 minutes until the asparagus is tender yet crisp.
Plate the salmon alongside the garlic butter asparagus. Garnish with a squeeze of lemon if desired and serve immediately.
