1 medium Fresh Tomato
2 oz Fresh Mozzarella Cheese
0.5 cup cooked Brown Rice
1 cup Fresh Spinach
1 tsp Olive Oil
3 sprigs Fresh Basil
Salt and Pepper to taste
PREPARATION
Press the tofu to remove excess moisture and cut into 1/2-inch thick slices.
Pat the tofu slices dry and season lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Add the tofu slices and cook for about 3-4 minutes on each side until golden and crispy.
