INGREDIENTS
300g Extra-Firm Tofu
100g Shelled Edamame
50g Broccoli
50g Red Bell Pepper
50g Carrot
1 Tbsp Sesame Seeds
1 tsp Fresh Ginger (minced)
1 Tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Honey
1 tsp Canola Oil
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, lightly toss the tofu cubes with a small amount of cornstarch (optional) for extra crispiness.
Heat canola oil in a non-stick skillet over medium-high heat and add the tofu cubes. Sauté until all sides are golden and crispy, about 6-8 minutes. Remove and set aside.
In the same skillet, add minced ginger and quickly stir for about 30 seconds until fragrant.
Add broccoli, red bell pepper, and carrot to the skillet. Sauté for about 3-4 minutes until just tender but still crisp.
In a small bowl, whisk together low-sodium soy sauce, rice vinegar, and honey to create the ginger glaze.
Return the crispy tofu to the skillet, drizzle the ginger glaze over the tofu and vegetables, tossing gently to combine and heat through.
Plate the tofu and vegetables, then sprinkle with shelled edamame and sesame seeds for added crunch and protein.
Serve immediately and enjoy your balanced, flavorful bowl!
