1/4 cup chickpea flour (30g)
1/2 cup silken tofu (120g)
10g unflavored pea protein powder
2 garlic cloves
1/4 medium onion (chopped)
1/4 cup fresh parsley (chopped)
1/4 cup fresh cilantro (chopped)
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp baking powder
Salt & pepper to taste
For tahini sauce: 1 tsp tahini, 1 tsp lemon juice, 1 tbsp water
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a food processor, combine the chickpeas, silken tofu, chickpea flour, pea protein powder, garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse, slightly chunky mixture forms.
Scoop the mixture into small patties or balls, flattening them slightly to form falafel patties. Place them on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the falafel are firm and starting to crisp on the edges.
