Lean Turkey Sloppy Joe Sliders with Sweet Potato Buns
Savor a lighter twist on the classic sloppy joe with lean ground turkey simmered in a savory tomato and pepper sauce, nestled between sweet potato rounds that serve as nutritious buns. This dish combines a satisfying balance of tender, flavorful meat and subtly sweet, soft sweet potato, ideal for any time of day.
INGREDIENTS
5 oz Lean Ground Turkey (142g)
112g Sweet Potato
1/4 cup Tomato Sauce (60g)
1/4 cup Red Bell Pepper (38g)
1/4 cup Yellow Onion (40g)
1 clove Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F. Slice the sweet potato into 2 equally thick rounds to be used as buns. Place them on a baking sheet, lightly brush with a small amount of olive oil, and roast for about 20-25 minutes until tender.
Meanwhile, finely dice the red bell pepper, yellow onion, and garlic.
Heat the remaining olive oil in a skillet over medium heat. Sauté the diced onion, red bell pepper, and garlic until they begin to soften, about 3-4 minutes.
Add the lean ground turkey to the skillet. Break it up with a spatula and cook until it is browned and cooked through, approximately 6-7 minutes. Season with salt and pepper.
Stir in the tomato sauce and allow the mixture to simmer for an additional 2-3 minutes to meld the flavors.
Once the sweet potato rounds are roasted, remove them from the oven. Spoon a generous portion of the turkey mixture onto one sweet potato round and top with the other round, pressing lightly to form a slider.
Plate the sliders and serve warm. Enjoy your balanced, flavorful meal!
