INGREDIENTS
6 oz Pork Tenderloin
1 medium Orange
2 cloves Garlic
1 cup shredded Red Cabbage
1 medium Carrot
1 Lime
2 tsp Extra Virgin Olive Oil
1 tsp Cumin
1 tsp Chili Powder
Salt & Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat.
Score the pork tenderloin lightly and season it generously with salt, pepper, cumin, and chili powder.
Heat the olive oil in the skillet and add the pork. Sear on all sides until browned, about 2-3 minutes per side.
Meanwhile, peel and segment the orange, reserving any juice. Mince the garlic.
Add the minced garlic to the skillet and allow it to cook for 1 minute until fragrant.
Reduce the heat to low, add the orange segments and a splash of the orange juice along with the juice of the lime. Cover and let the pork simmer for 15-20 minutes, or until tender enough to be pulled apart easily.
In a bowl, combine the shredded red cabbage and grated carrot. Drizzle a bit of lime juice and season with a pinch of salt and pepper to form a fresh slaw.
Once the pork is tender, use two forks to pull it apart gently.
Plate a serving of pulled pork and top with a generous portion of the fresh slaw. Garnish with extra orange segments if desired, and serve warm.
