Enjoy succulent, crispy chicken thighs roasted to golden perfection with an aromatic blend of garlic and fresh herbs. The dish boasts a delightful contrast of crisp skin and tender meat, enhanced by a bright hint of lemon for a memorable dining experience.
INGREDIENTS
2 pieces Chicken Thighs (boneless, skin-on) ~300g
1 teaspoon Olive Oil
3 Garlic Cloves
3 sprigs Fresh Rosemary
3 sprigs Fresh Thyme
1 tablespoon Lemon Juice
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Pat the chicken thighs dry with paper towels to ensure crispiness.
In a small bowl, combine olive oil, minced garlic, chopped rosemary and thyme (remove leaves from the sprigs), lemon juice, salt, and pepper.
Rub the herb-garlic mixture evenly over both sides of the chicken thighs.
Place the chicken thighs skin-side up on the baking sheet, ensuring they are not touching to allow even roasting.
Roast in the preheated oven for about 25-30 minutes or until the skin is crispy and the internal temperature reaches 165°F (74°C).
Remove from the oven and let rest for a few minutes before serving.
