INGREDIENTS
175g Firm Tofu
45g Dry Rice Noodles
2 tbsp Peanut Butter
50g Shelled Edamame
1 tsp Fresh Ginger (grated)
1 clove Garlic (minced)
1 tbsp Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Oil
1 small Green Onion (chopped)
PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes.
Cook rice noodles according to package instructions; drain and set aside.
In a non-stick skillet, heat the sesame oil over medium heat and add the tofu cubes. Fry until all sides are golden and crispy.
While tofu is crisping, prepare the sauce by whisking together peanut butter, soy sauce, rice vinegar, grated ginger, and minced garlic in a small bowl. Add a few tablespoons of warm water if needed to achieve a smooth consistency.
Gently toss the cooked rice noodles and edamame with the peanut-ginger sauce in a large bowl.
Fold in the crispy tofu and mix well to ensure even coating.
Garnish with chopped green onions and serve immediately.
