INGREDIENTS
6 oz Lean Ground Turkey
1 Large Egg
1 tsp Italian Seasoning
1 tsp Garlic Powder
Salt and Black Pepper, to taste
Approx. 1 cup mixed veggies: 1/3 cup each Red Bell Pepper, Zucchini, and Red Onion
1 tsp Olive Oil
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine the lean ground turkey with the egg, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly until well incorporated.
Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter, and place them on a lightly greased baking sheet.
In another bowl, toss the chopped red bell pepper, zucchini, and red onion with olive oil, salt, and pepper to coat evenly.
Spread the vegetables on a separate baking sheet.
Place both the meatballs and vegetables in the preheated oven. Roast the vegetables for about 15-20 minutes, stirring halfway through, and bake the meatballs for 18-22 minutes or until they are fully cooked and lightly browned.
Remove from the oven and let cool slightly before serving.
