1 tsp grated Fresh Ginger
1 clove minced Garlic
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
1 tbsp Lime Juice

PREPARATION
Press the tofu to remove excess water and cut it into bite-sized cubes.
Cook the rice noodles according to package instructions, then drain and set aside.
In a non-stick pan, heat the sesame oil over medium heat and sauté the tofu cubes until they turn crispy and golden on all sides.
Add the minced garlic and grated ginger to the pan and sauté for an additional 1 minute.
In a small bowl, whisk together the peanut butter, low sodium soy sauce, and lime juice to create a creamy sauce.
Add the cooked rice noodles and shelled edamame to the pan with tofu. Pour the peanut-ginger sauce over the mixture and toss gently to coat all the ingredients.
Warm through for 2-3 minutes and remove from heat.
Garnish with chopped scallions and serve immediately.
