INGREDIENTS
2 cups Cauliflower Rice (approx. 200g)
1 cup Shredded Part-Skim Mozzarella Cheese (112g)
1 large Egg
1/4 cup Tomato Sauce
1/4 cup Cherry Tomatoes, halved
1 teaspoon Olive Oil
1/4 cup Fresh Basil Leaves
1/2 teaspoon Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
In a bowl, combine cauliflower rice, egg, garlic powder, salt and pepper. Mix until well combined to form a dough-like consistency.
Transfer the cauliflower mixture onto the baking tray and press into a thin, round crust shape.
Bake the crust in the preheated oven for 18-20 minutes or until it starts to turn golden and feels firm.
Remove the crust from the oven and spread the tomato sauce evenly over the surface.
Sprinkle the shredded mozzarella cheese over the sauce, then top with halved cherry tomatoes.
Return the pizza to the oven and bake for an additional 8-10 minutes, until the cheese is melted and bubbly.
After removing from the oven, drizzle with olive oil and garnish with fresh basil leaves before serving.
