PREPARATION
Preheat your oven to 400°F. Dice the sweet potato into small cubes and toss with a teaspoon of olive oil, cayenne pepper, salt and pepper.
Spread the sweet potato cubes on a baking sheet and roast for about 20-25 minutes until tender and slightly crispy on the edges.
